Description

This Authentic Birria recipe is a traditional Mexican dish featuring tender, flavorful beef cooked in a rich, spicy chile sauce. Perfect for serving as a hearty stew or using as a filling for delicious birria tacos.

For the Birria:

  • 3 pounds beef chuck roast (or a mix of chuck and short ribs)
  • 3 dried guajillo chiles, stemmed and seeded
  • 2 dried ancho chiles, stemmed and seeded
  • 2 dried pasilla chiles, stemmed and seeded
  • 1 medium onion, quartered
  • 4 garlic cloves
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups beef broth
  • 2 cups water

Optional for Serving:

  • corn tortillas
  • chopped onions
  • cilantro
  • lime wedges

Instructions

  1. Prepare the Chile Sauce: Toast dried chiles, then blend with onion, garlic, vinegar, spices, and 1 cup of broth.
  2. Cook the Beef: Combine beef, chile sauce, bay leaf, remaining broth, and water in a pot. Simmer for 3-3.5 hours until tender.
  3. Shred and Simmer: Shred the meat, return to pot, and simmer uncovered for 15-20 minutes.
  4. Serve: Enjoy the birria as a stew or use as taco filling with tortillas, onions, cilantro, and lime.

Notes

  • For extra flavor, dip tortillas in the birria broth before heating for tacos.
  • This recipe can be adapted for a slow cooker or Instant Pot.
