For the Birria:
- 3 pounds beef chuck roast (or a mix of chuck and short ribs)
- 3 dried guajillo chiles, stemmed and seeded
- 2 dried ancho chiles, stemmed and seeded
- 2 dried pasilla chiles, stemmed and seeded
- 1 medium onion, quartered
- 4 garlic cloves
- 1 tablespoon apple cider vinegar
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1 bay leaf
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups beef broth
- 2 cups water
Optional for Serving:

- cilantro
- lime wedges
Instructions
- Prepare the Chile Sauce: Toast dried chiles, then blend with onion, garlic, vinegar, spices, and 1 cup of broth.
- Cook the Beef: Combine beef, chile sauce, bay leaf, remaining broth, and water in a pot. Simmer for 3-3.5 hours until tender.
- Shred and Simmer: Shred the meat, return to pot, and simmer uncovered for 15-20 minutes.
- Serve: Enjoy the birria as a stew or use as taco filling with tortillas, onions, cilantro, and lime.
Notes
- For extra flavor, dip tortillas in the birria broth before heating for tacos.
- This recipe can be adapted for a slow cooker or Instant Pot.
