Ingredients
Scale
Salmon Rolls
- 4 skinless salmon fillets (about 6 oz each)
- 8 asparagus spears
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Ricotta Mixture
- 1 cup whole-milk ricotta cheese
- ½ cup fresh basil leaves, chopped
- Zest of 1 organic lemon
- Salt and pepper to taste
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and prepare a baking dish by lining it with parchment paper or coating it with cooking spray to prevent sticking.
- Blanch Asparagus: Bring a pot of salted water to a boil. Add the asparagus spears and blanch them for 2 minutes until tender-crisp. Immediately transfer the asparagus to a bowl of ice water to stop the cooking and preserve their bright green color. Drain and set aside.
- Prepare Ricotta Mixture: In a mixing bowl, combine the whole-milk ricotta cheese, chopped fresh basil leaves, lemon zest, and a pinch of salt and pepper. Stir well until the mixture is smooth and evenly blended.
- Assemble Salmon Rolls: Lay out each salmon fillet flat on a clean surface. Spoon the ricotta mixture evenly onto each fillet. Place one asparagus spear at one end of each fillet and carefully roll up the salmon tightly from the filling end to encase the filling and asparagus.
- Prepare for Baking: Position the salmon rolls seam-side down in the prepared baking dish. Drizzle the rolls with extra virgin olive oil and season the tops with additional salt and pepper to taste.
- Bake: Place the baking dish in the preheated oven and bake the salmon rolls for 15 to 20 minutes, until the salmon is cooked through and flakes easily with a fork.
Notes
- Blanching the asparagus before rolling helps retain its crisp texture and vibrant color.
- You can substitute basil with fresh dill or parsley for a different herb flavor.
- Use fresh organic lemon zest to enhance the brightness in the ricotta filling.
- Make sure to roll the salmon tightly so the filling does not leak during baking.
- Serve with a side of steamed vegetables or a light salad for a complete meal.
