Instructions

  1. Preheat: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream: In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla extract.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  4. Add Mix-ins: Fold in the old-fashioned oats, apples, nuts (if using), and quick oats.
  5. Bake: Drop rounded balls of dough onto the prepared baking sheets. Press the tops and sprinkle each cookie with the cinnamon-sugar topping. Bake for 10 to 12 minutes or until golden around the edges.
