Instructions
- Preheat oven: Preheat the oven to 375°F (190°C) and prepare a 12-cup muffin tin with liners or by greasing lightly.
- Mix dry ingredients: In a large bowl, combine the flour, sugars, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Combine wet ingredients: In another bowl, whisk together the eggs, oil, milk, and vanilla. Pour into the dry ingredients and mix until just combined. Fold in the chopped apples.
- Fill muffin cups: Divide the batter evenly among the muffin cups, filling each about 3/4 full.
- Add topping: Mix the optional cinnamon sugar topping and sprinkle over each muffin.
- Bake: Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
- Cool and serve: Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack.
