Delight your taste buds with these moist and flavorful Apple Cinnamon Muffins. Perfect for breakfast or as a snack, these muffins are bursting with sweet apple chunks and warm cinnamon spices.

Ingredients

Scale

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar (packed)
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Wet Ingredients:

  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups peeled and finely chopped apples (such as Honeycrisp or Granny Smith)

Optional Cinnamon Sugar Topping:

  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat oven: Preheat the oven to 375°F (190°C) and prepare a 12-cup muffin tin with liners or by greasing lightly.
  2. Mix dry ingredients: In a large bowl, combine the flour, sugars, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Combine wet ingredients: In another bowl, whisk together the eggs, oil, milk, and vanilla. Pour into the dry ingredients and mix until just combined. Fold in the chopped apples.
  4. Fill muffin cups: Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  5. Add topping: Mix the optional cinnamon sugar topping and sprinkle over each muffin.
  6. Bake: Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool and serve: Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack.

Notes
