Ingredients
Scale
Salad Ingredients
- 6 cups fresh arugula
- 2 crisp apples (such as Honeycrisp or Fuji), thinly sliced
- 1/3 cup crumbled goat cheese or feta
- 1/4 cup candied pecans or walnuts
- 1/4 cup dried cranberries
- Salt and black pepper to taste
Honey Balsamic Dressing
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Pinch of salt and pepper
Instructions
- Combine Salad Ingredients: In a large salad bowl, add the fresh arugula, thinly sliced apples, crumbled goat cheese, candied pecans, and dried cranberries. Toss gently to mix the ingredients evenly.
- Prepare the Dressing: In a small bowl or jar, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until the mixture is smooth and emulsified.
- Toss Salad with Dressing: Drizzle the honey balsamic dressing over the salad just before serving. Toss gently to coat the salad ingredients evenly. Adjust salt and pepper to taste if desired.
Notes
- Best served immediately after dressing to prevent the arugula from wilting and the apples from browning.
- Spinach or mixed greens can be used as substitutes for arugula.
- For a heartier meal, add grilled chicken.
