For the Casserole:

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked brown rice
  • 1 cup diced carrots
  • 1 cup diced sweet potatoes
  • 1 zucchini, chopped
  • 1 (14.5 oz) can diced tomatoes (with juices)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Nonstick cooking spray

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Cook the beef: In a large skillet over medium heat, cook the ground beef until browned. Add onion and garlic, sauté until softened.
  3. Combine ingredients: In a bowl, mix rice, carrots, sweet potatoes, zucchini, tomatoes, sour cream, milk, thyme, oregano, salt, pepper, and half of the cheese. Add beef mixture and mix well.
  4. Bake: Pour the mixture into the baking dish, top with remaining cheese, cover with foil, and bake for 30 minutes. Uncover and bake for an additional 10–15 minutes.
  5. Serve: Let it sit for 5 minutes before serving.
